Nic Bryce is the founder and owner of Grotto Meats, a charcuterie company in Bozeman, Montana. He also launched Bozeman’s first food truck, Rendezvous, with a crepe and taco menu.

Nic Bryce is a chef and charcutier who lives in Bozeman, MT with his lovely wife and 5 children. Raised in a farm town, Nic fell in love with fresh foods from the field at a young age. He enjoyed an apprenticeship as a chef in 2000, and has been struggling with the buttons on his chef coat ever since. Nic owns Rendezvous Catering, established 2011 and Grotto Meats, established 2017. Nic believes firmly that good community is built over good food. He pours himself into wholehearted hospitality as he serves a meal with the best in sourcing prepared gladly, yet painstakingly. Nic also believes that his Grotto Meats customers should have the finest charcuterie, making his home of Montana shine beautifully through skillful hand-crafting. You can find him shopping at a farmers market, soaking up the beauty of Montana with his wife and kids, or enjoying a cup of coffee.
